Ingredients
- 8 oz high-protein or low-carb pasta
- 1 cup cottage cheese
- 0.5 cup Fairlife milk or preferred milk
- 1 cup cheddar cheese (Cut into small blocks or shredded.)
- 1 tbsp butter
- 1 tsp cornstarch or arrowroot starch (Optional, for thickening.)
- 0.5 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and black pepper (To taste.)
Steps
- 1
Cook the high-protein or low-carb pasta according to the package directions. Drain it thoroughly and set it aside.
- 2
Add the cottage cheese, milk, paprika, garlic powder, onion powder, salt, and black pepper to a blender. Blend until the mixture is completely smooth.
- 3
Melt the butter in a saucepan over medium-low heat.
- 4
Pour the blended cottage-cheese mixture into the saucepan with the melted butter. Warm the mixture gently.
- 5
Add the cheddar cheese to the warm sauce. Stir until the cheese melts and the sauce becomes smooth and very creamy.
- 6
If a thicker sauce is desired, add the cornstarch or arrowroot starch. The starch may also be blended together with the cottage cheese mixture for easier incorporation.
- 7
Add the cooked pasta to the cheese sauce and toss until every noodle is evenly coated.
- 8
Serve immediately.
Notes
The source does not specify the package cooking time for the pasta or a precise amount of salt and pepper. The starch is optional and is included only if a thicker sauce is desired.
