Ingredients

  • 100 g Salted butter (softened)
  • 2 Garlic bulbs (tops cut off; cloves squeezed out after roasting)
  • Olive oil (a drizzle over each garlic bulb)
  • 3 tbsp Flat-leaf parsley (1 small handful, chopped (around 3 tbsp))
  • Salt (1 pinch)
  • Black pepper (1 pinch)
  • 1 Ciabatta (1 big loaf)
  • Cheddar (a few handfuls, to preference; grated)
  • Mozzarella (a few handfuls, to preference; grated)
  • 1 tsp Honey

Steps

  1. 1

Preheat the oven to 180°C (350°F).

  2. 2

Cut the tops off both garlic bulbs. Drizzle a little olive oil over each bulb, then wrap them in foil or baking paper.

  3. 3

Bake the wrapped garlic for 45 minutes, until soft. Let it cool for about 15 minutes, until it is comfortable to handle.

  4. 4

Put the softened butter in a bowl. Squeeze the roasted garlic cloves out of their skins into the bowl.

  5. 5

Chop the parsley and add it to the bowl with a pinch of salt and pepper. Mix to combine into garlic butter.

  6. 6

Cut the ciabatta in half lengthwise and spread the garlic-butter mixture over both halves.

  7. 7

Grate the cheddar and mozzarella over the bread, using an amount to your preference.

  8. 8

Return the bread to the oven and bake for 15–20 minutes, until the cheese is melted and golden. For a more deeply golden top, finish it under the grill if desired.

  9. 9

Drizzle honey over the finished bread, slice, and serve.
