Ingredients
- 18 oz Cheese tortellini
- 1.5 lb Steak (sirloin, ribeye, or filet) (Cut into bite-sized pieces.)
- 3 tbsp Avocado oil (Divided.)
- 2 tbsp Cajun seasoning (For seasoning the steak.)
- 4 tbsp Butter (Divided.)
- 5 cloves Garlic (Minced and divided: 2 cloves for the steak, 3 for the sauce.)
- 1 cup Beef stock
- 1 tsp Cajun seasoning (For the sauce.)
- Black pepper (Cracked, to taste.)
- 1.5 cups Heavy cream
- 2 oz Velveeta (Cubed.)
- 1 cup Parmesan cheese
Steps
- 1
Toss the bite-sized steak evenly with 1 tablespoon avocado oil and 2 tablespoons Cajun seasoning.
- 2
Heat a large pan over medium heat. Add the seasoned steak bites and cook undisturbed for 2 minutes to develop a crust.
- 3
Flip the steak and cook for another 2 minutes.
- 4
Reduce the heat to low. Add 2 tablespoons butter and 2 minced garlic cloves, then toss the steak and cook for 1–2 minutes more.
- 5
Remove the steak from the pan and tent it with foil to keep warm.
- 6
In the same pan over medium-low heat, add the remaining 2 tablespoons butter and 3 minced garlic cloves. Cook until fragrant, about 30 seconds.
- 7
Add the beef stock and increase the heat to medium. Simmer for 5–7 minutes, until slightly reduced.
- 8
Meanwhile, cook the tortellini according to the package instructions, then drain it.
- 9
Stir the remaining 1 teaspoon Cajun seasoning and cracked black pepper to taste into the sauce.
- 10
Reduce the heat to low, then add the heavy cream and stir to combine.
- 11
Add the cubed Velveeta and whisk until fully melted and smooth.
- 12
Simmer the sauce for about 5 minutes, until slightly thickened, then stir in the Parmesan until melted.
- 13
Add the drained tortellini to the sauce and stir to coat. Bring to a low boil for 1–2 minutes to thicken.
- 14
Remove the pan from the heat and top the tortellini with the steak bites before serving.
Notes
The linked Instagram post calls this a 20-minute dinner, but the site's structured recipe lists 10 minutes prep and 30 minutes cook time; the structured recipe times are used here. The body excerpt advises lowering the heat before adding butter and garlic to prevent scorching, cutting the Velveeta into small pieces so it melts faster, and avoiding overcooking the steak because it continues cooking slightly after removal.
