Ingredients
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1 tsp kosher salt
- 1 cup unsalted butter (room temperature)
- 1 can sweetened condensed milk (14 oz can)
- 4 large eggs (room temperature)
- 2 tsp vanilla extract
- 2 tbsp instant coffee powder (preferably Vietnamese coffee like Trung Nguyen)
- 1 tbsp boiling water
- 0.25 cup unsweetened cocoa powder
Steps
- 1
Preheat your oven to 350°F (175°C). Generously grease and flour a 10-cup bundt pan, or use a baking spray with flour.
- 2
In a medium bowl, whisk together the all-purpose flour, baking powder, and kosher salt until well combined.
- 3
In the bowl of a stand mixer fitted with the paddle attachment, cream the room temperature unsalted butter and granulated sugar together on medium-high speed until light and fluffy, about 3 to 5 minutes.
- 4
Pour in the sweetened condensed milk and beat until fully incorporated, scraping down the sides of the bowl as needed.
- 5
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- 6
Reduce the mixer speed to low and gradually add the dry flour mixture, mixing just until no streaks of flour remain. Do not overmix.
- 7
In a small bowl, dissolve the instant coffee powder in the boiling water to create a concentrated coffee liquid. Stir in the cocoa powder to form a thick paste.
- 8
Transfer about 2 cups of the plain batter into a separate bowl and fold in the coffee-cocoa paste until the batter is a uniform dark brown color.
- 9
Dollop the plain batter and the coffee batter alternately into the prepared bundt pan. Use a butter knife or skewer to gently swirl the two batters together to create a marble effect.
- 10
Bake for 50 to 60 minutes, or until a skewer inserted into the center of the cake comes out clean.
- 11
Let the cake cool in the pan for 15 minutes before carefully inverting it onto a wire rack to cool completely.
Notes
For the most authentic flavor, use a Vietnamese instant coffee brand like G7 or Trung Nguyen. The sweetened condensed milk provides a unique, dense, and moist crumb that mimics the creaminess of Vietnamese iced coffee.
