Ingredients

  • 1.5 cup Graham cracker crumbs (for the crust)
  • 6 tbsp Unsalted butter (melted)
  • 0.25 cup Granulated sugar (for the crust)
  • 16 oz Cream cheese (room temperature)
  • 0.5 cup Granulated sugar (for the filling)
  • 0.5 cup Sour cream (room temperature)
  • 1 tsp Vanilla extract
  • 2 Eggs (large, room temperature)
  • 0.33 cup Ube jam (halaya; for swirling)

Steps

    Preheat your oven to 325°F (160°C) and line an 8x8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.

    In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until the texture resembles wet sand.

    Press the crumb mixture firmly into the bottom of the prepared pan in an even layer. Bake for 10 minutes, then remove and let cool slightly while preparing the filling.
