Coffee Crème Baked Oats

Ingredients
- 0.25 cup cooled coffee (instant coffee + water + sweetener of your choice (monk fruit sweetener used in original))
- 0.5 cup oat flour
- 0.5 tsp baking powder
- 1 serving Real Coffee Protein Powder (The Organic Protein Co brand recommended)
- 0.25 cup milk (oat milk used in original)
- 4 tbsp plain Greek yogurt
- honey or maple syrup (add as much or as little depending on sweetness preference)
- 1 tsp instant coffee powder

Preheat your oven to 180°C (350°F).

In an oven-safe bowl, combine the cooled coffee, oat flour, baking powder, protein powder, and milk.

Mix all of the ingredients thoroughly, ensuring there are no clumps remaining in the batter.

Place the bowl in the oven and bake for 25 minutes.

While the oats are baking, prepare the coffee crème by mixing the Greek yogurt, sweetener (honey or maple syrup), and instant coffee powder together in a small bowl until smooth.

Remove the oats from the oven and allow them to cool completely.

Once cooled, spread the coffee crème over the top of the baked oats and enjoy.
Notes
These can be meal prepped in advance; they last in the fridge for about 3-4 days.
