Weights are estimates. Together, the ingredients weigh about 510 g before cooking, which is about 130 g per serving.
Steps
Combine the salt, black pepper, garlic powder, onion powder, nutritional yeast, and turmeric in a jar or airtight container to make the scramble seasoning. For a more intense flavor, blend the mixture in a spice grinder; this is optional.
Heat a non-stick pan or well-seasoned cast-iron skillet over medium heat.
Crumble the tofu into the pan, making the pieces as large or small as you prefer. Alternatively, mash it with a potato masher.
Cook the tofu for about 2 minutes, stirring frequently.
Add 1–3 teaspoons of scramble seasoning, using more if you like, and stir to season the tofu.
Add vegan yogurt, vegan cream cheese, or vegan mayonnaise. Start with a couple of tablespoons and add more until the scramble reaches your preferred consistency; the author usually uses about 1/3 cup.
Stir in any other seasonings you like, such as additional black pepper, and chopped fresh chives if desired.
Turn off the heat. Season with a couple of dashes of black salt, then add more to taste.
Serve immediately with toast, in a breakfast taco or burrito, or however you like.
Notes
The recipe does not specify which vegan yogurt, cream cheese, or mayonnaise to use; nutritional estimates for these alternatives are approximate and vary by product. Serve with toast, in a breakfast taco, or in a burrito as suggested.
