Ingredients
- 0.75 cup Granulated sugar
- 1.5 cups All-purpose flour
- 1 tbsp Vanilla extract or vanilla bean paste (Use vanilla extract or vanilla bean paste.)
- 3 Large eggs (Room temperature.)
- 1.75 tsp Baking powder
- 0.333 cup Buttermilk
- 2 tbsp Greek yogurt or sour cream (Use Greek yogurt or sour cream; room temperature.)
- 0.75 cup Unsalted butter (Softened.)
- 2 tbsp Freshly grated lemon zest
- Salt (A pinch.)
- 1 cup White chocolate chips
- 1 cup Fresh strawberries (Hulled and sliced.)
- 1 tbsp Granulated sugar (For the roasted strawberries.)
- 1 tbsp Freshly squeezed lemon juice (For the roasted strawberries.)
Steps
- 1
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- 2
Place the sliced strawberries, 1 tablespoon granulated sugar, and lemon juice in a bowl. Mix until the strawberries are evenly coated.
- 3
Spread the strawberry mixture over the parchment-lined baking sheet.
- 4
Roast for 20–25 minutes, until the strawberries are tender and lightly caramelized.
- 5
Remove the strawberries from the oven and let them cool completely.
- 6
Reduce the oven temperature to 350°F (180°C). Line a 9-by-5-inch loaf pan.
- 7
In a medium bowl, whisk together the flour, baking powder, and a pinch of salt. Set the mixture aside.
- 8
In a large bowl, combine the sugar and lemon zest. Rub them together with your fingers to release the citrus flavor from the zest.
- 9
Crack the eggs into the lemon-sugar mixture. Beat with an electric mixer for about 3 minutes, until pale in color.
- 10
Add the softened butter and beat for an additional 3–4 minutes, until smooth.
- 11
Add the vanilla extract or vanilla bean paste, then stir in the buttermilk and Greek yogurt or sour cream.
- 12
Gradually add the flour mixture and mix with a spatula until just combined.
- 13
Fold in the white chocolate chips until just combined. Do not overmix.
- 14
Pour one-third of the batter into the prepared loaf pan and smooth the top.
- 15
Add a layer of the cooled roasted strawberries over the batter.
- 16
Pour more batter over the strawberries, followed by another layer of roasted strawberries.
- 17
Top with the remaining batter, then add some roasted strawberries and white chocolate chips on top.
- 18
Bake at 350°F (180°C) for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
- 19
Remove the loaf from the oven and let it cool before cutting.
