Honey and Beer Chicken Breast

- 2 chicken breasts (with diagonal scores without cutting all the way through the meat)
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp paprika (sweet paprika)
- 2 tbsp olive oil (divided for marinating and for the pan)
- 0.5 onion (chopped)
- 3 cloves garlic (minced)
- 1 tbsp mustard
- 1 tbsp soy sauce
- 1 cup beer (approximately 250ml)
- 1 tbsp honey

Prepare the chicken breasts by making diagonal scores across the surface, ensuring the cuts do not go all the way through the meat.

Season the breasts with one teaspoon of salt, half a teaspoon of pepper, and one teaspoon of paprika.

Add a bit of olive oil over the chicken and massage the spices well so they penetrate the scores.

In a skillet over medium-high heat, add a drizzle of olive oil and place the chicken breasts in the pan.

Sear the breasts on both sides until they reach a deep golden color. Once ready, remove them from the pan and set aside.

In the same pan, add the chopped half onion and sauté until it begins to soften.

Add the three minced garlic cloves, the tablespoon of mustard, and the tablespoon of soy sauce. Mix and sauté a bit longer.

When the onion is translucent, pour in the beer and add the tablespoon of honey. Mix for a few seconds.

Return the reserved chicken breasts to the pan with the sauce.

Cover the pan and simmer over low heat until the sauce reduces and thickens, creating a delicious glaze over the chicken.
Notes
It is important not to cut the breast all the way through so it maintains its shape and juiciness. The sauce should be reduced until it reaches a syrupy consistency.
