Ingredients
- 1 lb Ground pork
- Salt (to taste; mix with the meat first)
- White pepper (to taste)
- Sugar (to taste)
- Soy sauce (to taste)
- Dark soy sauce (to taste)
- Shaoxing wine (to taste)
- Sesame oil (to taste)
- Fresh ginger (minced or grated; the image suggests approximately 1/2 inch, but the amount is not clearly discernible)
- 3 Scallions (stems, chopped)
- 0.75 cup Chicken broth (pour gradually into the mixture and add more, if necessary, until the bowls are almost full)
- Dumpling wrappers (enough to cover each bowl)
Steps
- 1
Place the ground pork in a bowl and mix it first with the salt. This order helps the meat retain more liquid.
- 2
Add the white pepper, sugar, soy sauce, dark soy sauce, Shaoxing wine, sesame oil, and ginger.
- 3
Mix all the ingredients until well combined.
- 4
Gradually pour in the chicken broth while mixing, incorporating it into the meat a little at a time.
- 5
Add the scallions and mix them into the filling.
- 6
Divide the filling among heatproof bowls.
- 7
Pour enough additional chicken broth into each bowl so that it is almost full.
- 8
Cover each bowl with a dumpling wrapper instead of individually wrapping and folding the dumplings.
- 9
Bring water to a boil in a pot or steamer, then carefully place the bowls in the steamer.
- 10
Cover and steam over high heat for approximately 12 minutes, or until the pork is fully cooked. The exact time will depend on the amount of filling in each bowl.
Notes
The source does not provide complete amounts for most of the seasonings or specify a final internal temperature. The amounts of those ingredients have been left as “to taste”; their weights and nutritional values are approximate estimates. The amount of broth visible in the OCR text is partially ambiguous, so it should be adjusted until the bowls are almost full.
