15-Minute “Blanket” Pork Dumplings
Juicy open-faced pork dumplings with tender wonton wrappers and a golden, crispy base. They are prepared directly in the pan, without folding, sealing, or pinching each dumpling individually.

Ingredients
- 450 g ground pork
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tsp sesame oil
- 1 egg (beaten)
- 1 tbsp cornstarch
- 0.5 carrot (finely chopped or grated)
- 1 cup cabbage (finely chopped)
- 3 scallions (chopped; reserve some for finishing)
- 12 wonton wrappers (one for each portion of filling)
- 2 tbsp neutral oil (for pan-frying)
- 0.5 cup water (for steaming)
- 2 tbsp soy sauce (for drizzling when serving)
- 1 tbsp chili oil (for drizzling when serving)

In a bowl, combine the ground pork with the oyster sauce, dark soy sauce, sesame oil, beaten egg, and cornstarch. Mix until you have a uniform, slightly sticky filling.

Add the carrot, cabbage, and some of the chopped scallions. Mix again until the vegetables are evenly distributed throughout the filling.

Heat the neutral oil in a large skillet, preferably nonstick, over medium heat.

Place spoonfuls of the filling directly into the skillet, leaving space between them so they do not stick together. Flatten each portion slightly so it cooks evenly.

Place one wonton wrapper over each portion of filling, like a small blanket. There is no need to fold, seal, or pinch the edges.

Cook over medium heat for approximately 1 minute, until the bottom of the filling begins to brown.

Carefully pour the water into the skillet, avoiding splatters from the hot oil. Cover immediately.

Cook covered for about 5 minutes, until the wrappers are tender and the pork is fully cooked; the center should reach 71 °C.

Uncover and cook for 2 more minutes, until the water has evaporated and the bottoms are golden and crispy.

Finish with the reserved scallions. Drizzle with soy sauce and chili oil, and serve hot.
