Ingredients
- 1.5 lb Ground pork
- Salt (A pinch)
- White pepper (A pinch)
- 2 tbsp Oyster sauce
- 1 tbsp Dark soy sauce
- 1 tsp Sesame oil (Toasted)
- 3 tbsp Chicken stock
- 1 cup Carrot (Very finely chopped)
- 5 Scallions (Thinly sliced)
- 1 tbsp Cooking oil
- 18 Gyoza or dumpling wrappers (Wonton wrappers can also be used)
- 18 Small shrimp (Peeled and deveined)
- 0.75 cup Water
- 1 Scallion (Chopped; for the finishing sauce)
- 1 tbsp Soy sauce (For the finishing sauce)
- 1 tbsp Chili oil (For the finishing sauce)
Steps
- 1
Place the ground pork in a bowl. Add the salt and mix until the meat becomes slightly sticky; this helps it retain moisture.
- 2
Add the white pepper, oyster sauce, dark soy sauce, sesame oil, and chicken stock. Mix to combine.
- 3
Add the chopped carrot and the five thinly sliced scallions. Mix the filling well.
- 4
Place a portion of filling in the center of each wrapper. Lift the edges up around the filling; there is no need to fold them perfectly.
- 5
Place one peeled and deveined shrimp on top of each dumpling.
- 6
Before turning on the heat, pour the cooking oil into a skillet and place all the dumplings inside.
- 7
Turn the heat to medium and cook for approximately 1 minute, until the bottoms begin to set.
- 8
Carefully pour the water into the skillet and cover. Steam for about 5 minutes, until most of the water has evaporated and the pork is completely cooked.
- 9
Remove the lid and cook for 1 minute more, until the bottoms are golden and crispy.
- 10
Mix the chopped scallion for the sauce with the soy sauce and chili oil. Serve the dumplings with this sauce.
