5-Ingredient Shrimp Ceviche
A refreshing and simple shrimp ceviche using only five main ingredients for a perfect appetizer or light lunch. The shrimp is quickly cooked in boiling water before marinating in citrus juice.

Ingredients
- 1 lb shrimp (peeled, deveined, and tail-off)
- 1 red onion (diced)
- 1 cucumber (diced)
- 0.5 cup fresh cilantro (chopped)
- 1 cup lemon juice (fresh)
- salt (to taste)
- pepper (to taste)

Bring a large pot of salted water to a boil.

Add 1 lb of peeled and deveined shrimp to the boiling water and cook until pink and opaque, about 2 to 3 minutes.

Drain the shrimp and immediately transfer them to a bowl of ice water to stop the cooking process.

Once cooled, drain the shrimp and cut into 1/2-inch pieces if large, or leave whole if small.

In a large bowl, combine the cooked shrimp, 1 diced red onion, 1 diced cucumber, and 1/2 cup of chopped fresh cilantro.

Pour 1 cup of lemon juice over the mixture and stir well to combine.

Season with salt and pepper to taste.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
Notes
Serve with tortilla chips, tostadas, or saltine crackers. You can add chopped jalapeño pepper if you want a spicy kick.
