Weights are estimates. Together, the ingredients weigh about 1.57 kg before cooking, which is about 390 g per serving.
Steps
Add the red bell pepper, onion, tomato, garlic, chili pepper, salt, curry powder, thyme, lemon juice, olive oil, and tomato paste to a blender. Blend until smooth and well combined.
Spread the marinade all over the chicken, and rub some underneath the skin so the meat absorbs the flavor.
Cover the chicken and refrigerate for 1 hour.
Transfer the chicken to a roasting pan and pour the remaining marinade over it. Cover the pan with parchment paper, then aluminum foil.
Bake in a preheated oven at 200°C (400 °F) (400°F (200 °C)) for about 1 hour, or until the chicken's internal temperature reaches 74°C (165 °F).
During the last 5 minutes, uncover the chicken and baste it with the pan juices, then switch on the oven's top broiler until golden brown.
Serve the chicken hot with your favorite rice.
Notes
The chicken's size is not specified, so the estimated weight and nutrition are approximate. Serve with rice; the quantity of rice is unspecified and is not included in the ingredients.
