Ingredients

  • 50 g Chickpea pasta (weighed dry and cooked according to package instructions)
  • Lettuce (to taste, chopped)
  • 1 Tomato (chopped)
  • 100 g Cooked chicken (shredded or chopped)
  • 100 g Light Greek yogurt (0% fat preferred)
  • 0.5 Avocado (ripe)
  • Fresh spinach (a handful for the sauce and the base)
  • 0.25 Red onion (chopped for the sauce)
  • Salt (to taste)
  • Oregano (to taste)
  • Black pepper (to taste)

Steps

    Cook the chickpea pasta in boiling salted water following package instructions until al dente. Drain and set aside.

    In the bowl of a chopper or food processor, add the red onion, the half avocado, a handful of spinach, the light Greek yogurt, salt, oregano, and pepper.

    Process the ingredients until a homogeneous and smooth cream or paste is obtained.

    In a large bowl, combine the chopped tomato, chopped lettuce, cooked chickpea pasta, and cooked chicken.

    Pour the avocado and yogurt sauce over the ingredients in the bowl.

    Mix everything well until the salad is completely integrated with the sauce and serve immediately.

Notes

If you wish to increase the volume of the dish without significantly increasing the calories, you can add more tomato, lettuce, and spinach. The protein and fiber in this dish help increase satiety and the thermogenic effect.
