Crispy Honey Butter Chicken

Ingredients
- 1.5 lb boneless chicken thighs (cut into bite-sized pieces)
- 0.5 tsp black pepper (for marinade)
- 1 tsp sugar (for marinade)
- 1 tbsp soy sauce (for marinade; divided)
- 1 tsp garlic powder (for marinade)
- 0.5 cup cornstarch (for coating)
- 2 tbsp neutral oil (for searing)
- 6 cloves garlic (finely diced)
- 3 tbsp unsalted butter
- 1 tbsp soy sauce (for sauce)
- 0.25 cup honey
- 2 tbsp water
- cooked white rice (for serving)

In a bowl, marinate the boneless chicken thighs with black pepper, sugar, soy sauce, and garlic powder. Ensure the chicken is evenly coated.

Coat the marinated chicken pieces thoroughly with cornstarch.

Heat a pan with oil over high heat until it is ripping hot.

Sear the chicken in the hot pan for about 3 minutes on each side until it is nicely browned and crispy. Remove chicken from the pan and set aside.

Finely dice a generous amount of fresh garlic.

In a clean pan (or the same pan wiped out) over low heat, melt the butter. Be careful not to let it burn.

Add the diced garlic to the melted butter and cook for about 30 seconds until fragrant.

Add the soy sauce, honey, and water to the pan with the garlic and butter.

Add the crispy chicken back into the pan. Let it simmer in the sauce for about 30 seconds, giving it a really good toss to ensure every piece is coated.

Once coated, remove from heat, cut the chicken into smaller pieces if desired, and serve immediately over rice.
Notes
For the best results, ensure your pan is very hot before adding the chicken to achieve maximum crispiness. If you have extra time, you can marinate the chicken longer, but it is designed to be a quick 30-minute meal.
