Ingredients

  • 0.5 cup unsalted butter (melted)
  • 0.5 cup light brown sugar
  • 0.5 cup granulated sugar
  • 3 bananas (very ripe, mashed)
  • 0.5 cup sour cream (room temperature)
  • 2 eggs (large, room temperature)
  • 2 tsp vanilla extract
  • 1.75 cup all-purpose flour
  • 0.333 cup cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup chocolate chips (plus more for topping, optional)

Steps

  1. 1

    Preheat oven to 425°F (220°C).

  2. 2

Grease and line a loaf pan with parchment paper.

  3. 3

In a large bowl, add bananas and mash until smooth with a few chunks.

  4. 4

Add melted butter, brown sugar, granulated sugar, and eggs to the mashed bananas and mix until smooth.

  5. 5

Add sour cream and vanilla extract. Mix until fully combined.

  6. 6

In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.

  7. 7

Fold dry ingredients into wet ingredients just until combined.

  8. 8

    Gently fold in chocolate chips.

  9. 9

Pour batter into prepared loaf pan and smooth the top. Add extra chocolate chips if desired.

  10. 10

Bake at 425°F for 10 minutes, then reduce oven temperature to 350°F (175°C) without opening the oven door.

  11. 11

Continue baking for 45–55 minutes, loosely tenting with foil around the 40-minute mark if the top is browning too quickly.

  12. 12

Check for doneness: a toothpick inserted into the center should come out with moist crumbs, not wet batter.

  13. 13

Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

The high initial temperature (425°F) followed by a reduction helps create a beautiful rise and dome on the loaf. Ensure your sour cream and eggs are at room temperature to prevent the melted butter from seizing.
