No-Fold Blanket-Style Chicken Dumplings

- 1 tbsp oyster sauce
- 1 tsp dark soy sauce
- 1 tsp sesame oil
- 1 egg (Beaten; helps keep the filling tender.)

- 1 cup cabbage (Finely chopped.)

- 1 tbsp vegetable oil (For browning the dumplings.)
- 1 tbsp soy sauce (For serving.)
- 1 tbsp chile oil (For serving; adjust to taste.)

Place the ground chicken in a bowl. Add the oyster sauce, dark soy sauce, sesame oil, beaten egg, and cornstarch. Mix until the mixture is smooth and slightly sticky.

Add the carrot, cabbage, and most of the green onions. Mix until the vegetables are evenly distributed throughout the filling.

Heat the vegetable oil in a large skillet, preferably nonstick, over medium heat. Once hot, place portions of the filling directly in the skillet, leaving space between them; there is no need to shape perfect dumplings.

Cover each portion of filling with a wonton wrapper, like a blanket. Gently press the edges of the wrapper against the filling so it adheres, without folding or pleating it.

Cook over medium heat for approximately 1 minute, until the bottom begins to set and lightly brown.

Carefully pour the water into the skillet, avoiding splashes from the hot oil. Cover immediately and steam for about 5 minutes, until the chicken is fully cooked and the wonton wrappers are tender.

Remove the lid and continue cooking briefly, if necessary, until the water evaporates and the base is golden brown and crispy. The chicken should reach an internal temperature of 165 °F (74 °C).
