Creamy Tuscan Chicken Pasta

Ingredients
- 1 tbsp Butter (for sautéing)
- 1 pint Cherry Tomatoes (cut in halves)
- 1 Red Onion (diced)
- 1 Red Bell Pepper (diced)
- 2 tbsp Tomato Paste
- 1 tbsp Roasted Garlic Paste
- 1 quart Heavy Cream
- 0.5 cup Parmesan Cheese (freshly grated)
- Salt and Pepper (to taste)
- 2 cup Spinach (fresh, or as much as you like)
- 1 lb Fettuccine Noodles (cooked according to package directions)
- 1 cup Mozzarella Cheese (shredded)
- 1 lb Chicken Breast (cooked protein of choice, sliced or diced)

Place about a tablespoon of butter in a large pan or skillet over medium heat.

Add the halved cherry tomatoes, diced red onion, and diced red bell pepper to the pan. Cook all together for 3-5 minutes, or until the vegetables have softened.

Add 2 tablespoons of tomato paste and 1 tablespoon of roasted garlic paste to the vegetable mixture. Stir well to combine and cook for another minute until fragrant.

Pour in one quart of heavy cream. Stir to incorporate the paste mixture and allow the cream to simmer and thicken slightly.

Add the fresh Parmesan cheese to the sauce and stir until melted. Save the mozzarella cheese for the final step.

Season the sauce with salt and pepper to your personal taste preference.

Add the fresh spinach to the pan and stir until it begins to wilt into the sauce.

Add the cooked fettuccine noodles and the mozzarella cheese to the pan. Mix everything well until the pasta is thoroughly coated and the mozzarella is melted.
