Ingredients
- 400 g Chicken breast (Diced)
- 1 Onion (Diced)
- 200 g Small pasta shapes (Creator used Garofalo Lumaca Rigata)
- 2 tbsp Sun-dried tomato paste (Heaped; diced sun-dried tomatoes may be substituted)
- 1 tsp Smoked paprika (Heaped)
- 1 tsp Garlic granules (Heaped)
- 1 tsp Dried basil (Heaped)
- 800 ml Chicken stock (Hot)
- 120 g Spinach leaves (Chopped)
- 80 ml Single cream
- 50 g Parmesan (Finely grated; 30 g is mixed into the pasta and the remainder is reserved for the topping)
- 80 g Mozzarella (Grated)
- Cooking spray (Spray the ovenproof pan generously)
- Salt (A good pinch, plus more to taste for seasoning)
- Water (A splash if the pasta looks dry before it is cooked)
Steps
- 1
Spray an ovenproof pan generously with cooking spray. Set it over medium heat.
- 2
Add the diced onion and a good pinch of salt. Cook for about 5 minutes, until the onion is tender.
- 3
Add the diced chicken and fry for about 1–2 minutes, until slightly browned.
- 4
Add the garlic granules, smoked paprika, and dried basil. Cook for 1 minute.
- 5
Add the sun-dried tomato paste and cook for a further minute.
- 6
Add the pasta and hot chicken stock. Bring to a boil, then cook for 15–18 minutes, stirring a few times to prevent sticking, until the pasta is just tender. If the pan looks dry before the pasta is cooked, add a splash of water.
- 7
Remove the pan from the heat. Add the single cream, chopped spinach, and 30 g of the Parmesan, then mix well.
- 8
Taste and adjust the seasoning as needed. Top with the remaining Parmesan and the grated mozzarella.
- 9
Bake at 180°C fan for about 20 minutes, until golden and bubbly.
- 10
Serve and enjoy.
