Ingredients
- cooking spray (For generously coating the ovenproof pan)
- 400 g chicken breast (Diced)
- 1 onion (Diced)
- salt (A good pinch, plus more for seasoning to taste)
- 200 g small pasta shapes (The creator used Lumaca Rigata)
- 2 tbsp sun-dried tomato paste (Heaped; can substitute diced sun-dried tomatoes)
- 1 tsp smoked paprika (Heaped)
- 1 tsp garlic granules (Heaped)
- 1 tsp dried basil (Heaped)
- 800 ml chicken stock (Hot)
- water (A splash, only if the pasta mixture looks dry before the pasta is cooked)
- 120 g spinach leaves (Chopped)
- 80 ml single cream
- 50 g Parmesan (Finely grated; 30 g is mixed in, and the remaining 20 g is reserved for the topping)
- 80 g mozzarella (Grated)
Steps
- 1
Generously coat an ovenproof pan with cooking spray and set it over medium heat.
- 2
Add the diced onion and a good pinch of salt. Cook for about 5 minutes, until the onion is tender.
- 3
Add the diced chicken and fry for a minute or two, until slightly browned.
- 4
Add the garlic granules, smoked paprika and dried basil. Cook for 1 minute.
- 5
Add the sun-dried tomato paste and cook for a further minute.
- 6
Add the pasta and hot chicken stock. Bring to a boil, then cook for 15–18 minutes, until the pasta is just tender. Stir a few times to prevent sticking; if the mixture looks dry before the pasta is cooked, add a splash of water.
- 7
Remove the pan from the heat. Add the cream, chopped spinach and 30 g of the Parmesan, then mix well. Taste and adjust the seasoning with salt as needed.
- 8
Top with the remaining Parmesan and the grated mozzarella.
- 9
Bake in a 180°C fan oven for about 20 minutes, until golden and bubbly.
- 10
Serve and enjoy.
Notes
The creator recommends serving with vegetables and says leftovers reheat well. The listed cooking times are approximate; the source does not specify additional seasoning quantities beyond a good pinch of salt and seasoning to taste.
