- 300 g chicken (cut into bite-sized pieces)
- 1 tsp salt (for chicken seasoning)
- 1 tsp black pepper (for chicken seasoning)
- 1 tsp red chilli powder (for chicken seasoning)
- 0.5 tbsp soya sauce (for chicken seasoning)
- 0.5 tbsp chilli sauce (for chicken seasoning)
- all-purpose flour (maida; for coating chicken)
- oil (for frying chicken and sautéing)
- 1 capsicum (medium size)
- 1 carrot (medium size)
- 1 onion (medium size)
- 0.5 tbsp garlic (minced)
- 0.5 cup ketchup
- 1 cup water (one big cup)
- 0.5 tsp salt (for gravy; add more if needed)
- 1 tsp black pepper (for gravy)
- 1 tsp chilli powder (for gravy)
- 1 tsp chicken powder
- 1 tbsp soya sauce (for gravy)
- 1 tbsp oyster sauce
- 1 tbsp chilli sauce (for gravy)
- 0.5 tbsp sugar
- 1 tbsp corn flour (for slurry)
- 1 tbsp water (for slurry)

In a bowl, combine 300g of chicken with 1 tsp salt, 1 tsp black pepper, 1 tsp red chilli powder, 1/2 tbsp soya sauce, and 1/2 tbsp chilli sauce.

Add all-purpose flour (maida) to the seasoned chicken. Mix well until the chicken is thoroughly coated. Set aside.

Heat oil in a pan and fry the coated chicken pieces until they are crispy and golden brown. Remove from the pan and set aside.

In a separate pan or the same pan with excess oil removed, add 1/2 tbsp minced garlic and sauté until fragrant.

Add the chopped capsicum, carrot, and onion to the pan with the garlic and sauté briefly.

Add 1/2 cup ketchup, 1 tsp black pepper, 1 tsp chilli powder, 1 tsp chicken powder, 1 tbsp soya sauce, 1 tbsp oyster sauce, 1 tbsp chilli sauce, 1/2 tbsp sugar, and 1/2 tsp salt (or more to taste).

Pour in 1 big cup of water and bring the mixture to a simmer.

Prepare a corn flour slurry by mixing 1 tbsp corn flour with 1 tbsp water. Stir the slurry into the boiling gravy to thicken it.

Once the gravy has thickened, add the fried crispy chicken back into the pan. Toss to coat the chicken in the gravy.

Serve the Gravy Manchurian hot with rice.
Notes
The creator mentions that oyster sauce is optional but recommended. The corn flour slurry (1 tbsp corn flour + 1 tbsp water) is essential for achieving the correct gravy consistency. Serve with rice for a complete meal.
