Ingredients
- 2 cup cottage cheese (Good Culture brand recommended)
- 8 oz fat-free cream cheese (softened)
- 1 cup plain nonfat Greek yogurt
- 2 scoop vanilla protein powder
- 2 tbsp sugar-free cheesecake pudding mix
- 2 tbsp allulose (or sweetener of choice)
- 1 tsp vanilla extract
- 1 tsp cinnamon (for cheesecake filling)
- 2 Honeycrisp apples (diced)
- 1 tsp cinnamon (for apple layer)
- 1 tsp apple pie spice
- 1 tsp lemon juice
- sugar-free caramel syrup (or homemade date caramel for drizzling)
- 1 cup high-protein graham crackers (crushed; or Catalina Crunch cereal (optional crust))
- 2 tbsp light butter (melted (optional crust))
- 5 g creatine (optional; stir into cheesecake mixture)
Steps
- 1
Place the cottage cheese, softened cream cheese, Greek yogurt, vanilla protein powder, pudding mix, allulose, vanilla extract, and 1 teaspoon of cinnamon into a blender or food processor.
- 2
Blend the mixture until it is completely smooth and creamy. If using creatine, stir in 5g now.
- 3
In a separate bowl, toss the diced Honeycrisp apples with 1 teaspoon of cinnamon, the apple pie spice, and lemon juice until evenly coated.
- 4
Optional: For softer apples, microwave the spiced apple mixture for 60–90 seconds, then allow them to cool completely before assembling.
- 5
If making the optional crust, combine the crushed graham crackers or cereal with the melted light butter. Divide this mixture evenly among the bottoms of four jars.
- 6
Spoon a layer of the cheesecake filling into each jar over the crust.
- 7
Add a layer of the spiced apples on top of the cheesecake filling.
- 8
Repeat the layers by adding another spoon of cheesecake filling and topping with the remaining apples.
- 9
Drizzle each jar with sugar-free caramel syrup (or date caramel) and finish with a light dusting of cinnamon.
- 10
Refrigerate the jars for at least 2 hours to allow the filling to set. For the best flavor and texture, let them sit overnight.
Notes
These jars are excellent for meal prep and will stay fresh in the refrigerator for 4–5 days. The addition of creatine is optional and does not affect the taste or texture. For the best experience, use a high-quality cottage cheese like Good Culture to ensure a thick, creamy consistency.
