Ingredients

  • 1 cup low-fat cottage cheese
  • 2 scoops chocolate protein powder
  • 0.25 cup unsweetened cocoa powder
  • 2 tbsp peanut butter powder
  • 2 tbsp allulose (or sweetener of choice)
  • 1 tsp vanilla
  • salt (pinch)
  • 1 cup chocolate chips (sugar-free chocolate chips recommended)
  • 2 tsp refined coconut oil

Steps

    Place the cottage cheese in a blender and blend until completely smooth with no lumps remaining.

    Add the chocolate protein powder, cocoa powder, peanut butter powder, sweetener, vanilla, and a pinch of salt to the blender.

    Blend the mixture until a thick, uniform brownie batter forms.

    Transfer the mixture to a bowl and refrigerate for 30 minutes to allow it to firm up.

    Roll the chilled batter into 12 even, bite-sized balls.

    Place the balls in the freezer for 20–30 minutes until very cold.

    In a microwave-safe bowl, combine the chocolate chips and refined coconut oil.

    Melt the chocolate in 20-second intervals, stirring between each interval, until the mixture is completely smooth.

    Dip each frozen brownie bite into the melted chocolate to coat thoroughly.

    Place the coated bites onto a sheet of parchment paper.

    Refrigerate for 10–15 minutes until the chocolate shell has hardened completely.

Notes

The coconut oil is the secret to the perfect shell. Mixing it with chocolate chips creates a thin coating that hardens quickly. For the best 'snap', ensure the bites are frozen and very cold before dipping.
