Ingredients
- 0.5 cup Natural peanut butter (For the dough)
- 0.5 cup Greek yogurt
- 0.25 cup Honey or maple syrup (Choose honey or maple syrup)
- 1 Egg
- 1 tsp Vanilla extract
- 0.5 cup Cocoa powder
- 0.25 cup Oat flour
- 0.5 tsp Baking powder
- Salt (A pinch)
- 0.25 cup Peanut butter (For the gooey center)
Steps
- 1
In a bowl, mix the peanut butter for the dough, Greek yogurt, honey or maple syrup, egg, and vanilla extract. Stir until the mixture is smooth and creamy.
- 2
Add the cocoa powder, oat flour, baking powder, and a pinch of salt. Mix until you have a thick, brownie-like dough.
- 3
Take portions of dough and flatten them. Place one tablespoon of peanut butter for the center in the middle of each portion.
- 4
Cover each filling with more dough and seal the edges to enclose the peanut butter.
- 5
Bake at 350 °F (175 °C) for 10–12 minutes, until the edges are set and the center is still soft.
- 6
Let the cookies rest after baking; resting helps keep the center gooey.
Notes
The recipe lists honey or maple syrup as alternatives but does not specify which one to choose. It does not state how long the cookies should rest.
