Chewy, gluten-free noodles made with just carrots and glutinous rice flour, served with a savory garlic chili oil sauce.

Ingredients

  • 400 g carrots (peeled and cut into rounds)
  • 200 g glutinous rice flour (plus up to 50g more as needed for texture)
  • 2 garlic cloves (minced)
  • 2 spring onions (finely sliced)
  • 1 tsp red chili flakes
  • 2 tbsp neutral oil (heated until hot)
  • 1 tbsp soy sauce
  • 1 tbsp black vinegar (or rice vinegar)

    Add the peeled and sliced carrots to a saucepan and cover with just enough salted water.

    Boil the carrots until fork tender, then drain.

    Immediately mash or blend the carrots until smooth while they are still hot.

    While the mashed carrot is still warm, mix in 200g of the glutinous rice flour until a dough forms.

    Add more flour as needed (up to 50g) until the dough is smooth and no longer sticky. If the dough becomes too crumbly, add a small amount of hot water to bring it together.

    Pinch off small pieces of dough and roll them into balls.

    Press your finger into the center of each ball to create a little button shape.

    Cook the button noodles in boiling water for about 3 minutes, or until 30 seconds after they float to the surface.

    Divide the cooked noodles across two bowls.

    Top the noodles with minced garlic, sliced spring onions, and red chili flakes.

    Pour the 2 tablespoons of hot neutral oil over the aromatics to sizzle.

    Stir in the soy sauce and black vinegar, toss to coat the noodles thoroughly, and serve immediately.

Notes

The trick to a smooth dough is mixing the flour into the carrots while they are still hot. If the dough is too crumbly, hot water is the best fix.
