Ingredients

  • 400 g Plain flour (Additional flour is needed for rolling, folding, and preventing the noodles from sticking; rice flour may be used instead for dusting.)
  • 280 g Broccoli florets (Use 280–300 g florets.)
  • 1 tbsp Salt (Used in the broccoli cooking water and the salted noodle-cooking water; the source does not specify whether additional salt is needed for boiling the noodles.)
  • 1 cup Water (For simmering the broccoli.)
  • Favorite sauce (For tossing with the cooked noodles; quantity and type are not specified.)

Steps

  1. 1

Add 1 cup of water and the salt to a saucepan and bring the water to a boil.

  2. 2

Add the broccoli florets to the boiling water and simmer for 5–8 minutes, until they are fork-tender.

  3. 3

Drain the broccoli well and allow it to cool slightly.

  4. 4

Add the cooked broccoli and 400 g plain flour to a food processor. Blend until a dough forms.

  5. 5

Transfer the dough to a work surface and knead for 5 minutes.

  6. 6

Cover the dough and let it rest for 20 minutes.

  7. 7

    Divide the dough in half.

  8. 8

On a floured surface, roll one piece of dough into a thin rectangle.

  9. 9

Flour the rolled dough and fold it over itself 3 times.

  10. 10

Dust the folded dough with flour, then slice it into noodles. Toss the noodles through more flour, or rice flour, to prevent them from sticking together.

  11. 11

Repeat the rolling, folding, slicing, and flouring process with the remaining dough.

  12. 12

Bring a pot of salted water to a boil, then add the noodles.

  13. 13

Cook the noodles for 4–5 minutes, or until cooked to your liking.

  14. 14

Drain the noodles and toss them through your favorite sauce. Serve immediately.

Notes

The source does not specify the quantity or type of sauce, the amount of additional flour used for dusting, or the exact quantity of salt in the noodle-cooking water. It also does not specify the noodle thickness or cutting width.
