Carrot Noodle Buttons
These cute little dumplings are made with just two ingredients: carrots and glutinous rice flour. They have a pleasantly chewy texture, are naturally gluten-free, and are a great way to use up leftover carrots.

Ingredients
- carrots (peeled and cut into pieces)
- glutinous rice flour (add until the dough reaches the desired consistency)
- water (for boiling)
- sauce for serving (such as soy sauce, chili oil, or sesame oil)
Steps
- 1
Prepare the carrots by peeling them and cutting them into small pieces.
- 2
Boil or steam the carrots until completely tender.
- 3
Mash the cooked carrots into a smooth purée using a fork or blender.
- 4
Gradually add the glutinous rice flour to the carrot purée, kneading until the dough no longer sticks to your hands and becomes elastic.
- 5
Form the dough into small balls about the size of a game die.
- 6
Using the neck of a glass bottle or a similar tool, gently press into the center of each ball to create a mushroom or button shape.
- 7
Bring a pot of water to a boil.
- 8
Drop the button noodles into the boiling water and cook until they float to the surface.
- 9
Remove the cooked noodles and serve with your favorite sauce, such as a mixture of soy sauce, chili oil, and herbs.
Notes
The exact amount of flour depends on the moisture content of the carrots. Add the flour gradually until the dough resembles soft modeling clay. Use glutinous rice flour specifically to achieve the characteristic chewy texture.
