- 0.5 cup sour cream
- 2 large eggs
- 2.5 cup finely grated carrots (from 3 carrots)
- 0.75 cup chopped walnuts (plus more for topping)
- 16 oz cream cheese (2 (8-ounce) blocks, preferably Philadelphia, softened)
- 2 cup powdered sugar
- 0.25 cup sour cream (for frosting)
- 0.125 tsp fine salt (plus more to taste)

Preheat your oven to 350°F (175°C). Grease a 9-inch round or square cake pan with nonstick cooking spray or oil.

In a large bowl, whisk together the flour, ground ginger, ground cardamom, baking soda, baking powder, and fine salt.
