Ingredients

  • 4 oz dark chocolate (70% cocoa at least, chopped)
  • 0.25 cup salted butter
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 2 eggs (large)
  • 1 tsp vanilla
  • 1 tbsp neutral oil
  • 1.25 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • graham cracker squares (one per cookie)
  • chocolate squares (one per cookie)
  • marshmallows (one per cookie)

Steps

  1. 1

Melt the dark chocolate and butter together until smooth, then set aside to cool slightly.

  2. 2

In a separate bowl, whisk together the granulated sugar, brown sugar, and eggs until the mixture is pale, thick, and fluffy.

  3. 3

Whisk in the vanilla and neutral oil until combined.

  4. 4

Slowly mix in the melted chocolate and butter mixture until fully combined.

  5. 5

Sift in the flour, cocoa powder, baking powder, and salt.

  6. 6

Fold everything together just until combined; do not overmix.

  7. 7

Line a baking sheet with parchment paper.

  8. 8

Place a graham cracker piece, a square of chocolate, and a marshmallow on the parchment for each cookie.

  9. 9

Scoop the cookie dough over each s’mores stack, making sure it’s completely covered.

  10. 10

Gently poke a small hole in the center of each cookie so a little of the marshmallow can peek through while baking.

  11. 11

Bake at 350°F (177°C) for about 12–15 minutes, or until the edges are set and the centers are still soft.

  12. 12

Let the cookies cool on the baking sheet for 5–10 minutes before moving them.

  13. 13

Decorate with additional chocolate if desired.

Notes

Ensure the melted chocolate has cooled slightly before adding to the egg mixture to avoid scrambling the eggs. For the best results, use a high-quality dark chocolate with at least 70% cocoa.
