Ingredients

  • 4 pork chops (bone-in or boneless)
  • salt (to taste, for seasoning chops)
  • black pepper (to taste, for seasoning chops)
  • 1 tbsp vegetable oil (for searing)
  • 1 onion (chopped)
  • 2 tbsp all-purpose flour (for the gravy)
  • 1.5 cup chicken or beef broth (for the gravy)

Steps

  1. 1

Season the pork chops on both sides with salt and black pepper.

  2. 2

Heat vegetable oil in a large skillet over medium-high heat.

  3. 3

Add the pork chops to the hot skillet and sear until golden brown on both sides. Remove the chops from the pan and set aside.

  4. 4

In the same skillet, add the chopped onions and cook until they are caramelized and fragrant.

  5. 5

Sprinkle flour over the onions and stir for 1 minute to cook out the raw flour taste.

  6. 6

Slowly pour in the broth while whisking or stirring constantly to create a smooth gravy.

  7. 7

Add the pork chops back into the skillet with the gravy.

  8. 8

Let the pork chops simmer in the sauce for a few minutes until cooked through and the sauce has thickened.

  9. 9

Serve the smothered pork chops warm, ideally alongside mashed potatoes and green beans.

Notes

The transcript mentions serving this with mashed potatoes and green beans for a complete meal. For a thicker gravy, let it simmer slightly longer before adding the pork chops back in.
