Ingredients

  • 1 avocado (diced)
  • 1 mango (diced)
  • 120 g tomato (chopped)
  • 120 g red onion (finely chopped)
  • 90 g carrot (grated or finely chopped)
  • cilantro (fresh and chopped to taste)
  • 25 ml olive oil (for the dressing)
  • 40 ml lemon juice (for the dressing)
  • 30 ml white vinegar (for the dressing)
  • pepper (a pinch)
  • salt (a pinch)

Steps

  1. 1

Dice the avocado and mango into uniform cubes.

  2. 2

Chop the tomato and red onion; grate or finely chop the carrot.

  3. 3

Place the avocado, mango, tomato, red onion, carrot, and chopped cilantro in a large bowl.

  4. 4

In a small bowl or a jar with a lid, add the olive oil, lemon juice, white vinegar, pepper, and salt.

  5. 5

Cover the dressing container and shake vigorously until the ingredients are well emulsified.

  6. 6

Pour the dressing over the vegetable and fruit mixture.

  7. 7

Toss everything gently so the ingredients are coated with flavor without mashing the avocado, and serve immediately.

Notes

For a community-suggested variation, you can substitute the carrot with shrimp and add a bit of honey to the vinaigrette for a sweet and sour touch.
