- 2 L-shaped organic chicken legs (L-shaped refers to the whole leg (thigh and drumstick))
- 4.5 Red dates (4-5 dates)
- 4.5 slices Ginger (4-5 slices for steaming)
- 2 tbsp Ginger (Finely minced; for the sauce (part of 1:1 ratio))
- 2 tbsp Scallions (Finely minced; for the sauce (part of 1:1 ratio))
- 2 tbsp Neutral oil (For heating and pouring over aromatics)
- 1 tbsp Soy sauce
- 0.5 tsp Sugar
- 0.25 tsp Salt

Prepare the chicken for steaming by placing the 2 L-shaped chicken legs, 4-5 red dates, and 4-5 slices of ginger in a heatproof dish that fits inside your steamer.

Bring water to a boil in your steamer. Once boiling, place the dish inside and steam for 16 minutes.

Remove the chicken from the steamer and let it cool down until safe to handle.

Carefully pour the liquid (chicken broth/soup) from the steaming dish into a separate bowl and set aside for the sauce.

Shred the cooled chicken into bite-sized pieces and arrange them on a serving plate.

Prepare the sauce aromatics by combining finely minced ginger and scallions in a 1:1 ratio in a small heatproof bowl.

Heat oil in a small pan until shimmering, then carefully pour the hot oil over the minced ginger and scallions to sizzle and release their fragrance.

Add 1 tbsp soy sauce, 1/2 tsp sugar, 1/4 tsp salt, and the reserved chicken broth from the steaming process to the ginger-scallion oil mixture. Stir well to combine.

Notes
The 'L-shaped' chicken refers to the whole leg (thigh and drumstick attached). The soup/broth collected after steaming is highly concentrated and provides the base for the sauce flavor.
