Ingredients

  • 4 snacking cucumbers (sliced thin into chips using a mandolin)
  • 1 tbsp chili garlic sauce
  • 1 tsp olive oil (a splash)
  • 2 tbsp white vinegar (a couple drinks)
  • 1 tbsp Cajun seasoning (heavy-handed; adjust to taste)

Steps

  1. 1

Prepare the snacking cucumbers by running them over a mandolin to create nice and thin pickle chips.

  2. 2

Place the cucumber slices into a container or bowl and add one tablespoon of chili garlic sauce.

  3. 3

Add a splash of olive oil and a couple of splashes (about 2 tablespoons) of white vinegar to the cucumbers.

  4. 4

Sprinkle Cajun seasoning heavily over the top of the mixture.

  5. 5

Close the container or cover the bowl and shake vigorously until all cucumber slices are fully incorporated and coated in the sauce and seasoning.

Notes

For the best results, use a mandolin for uniform, paper-thin slices. This snack is best served immediately while the cucumbers are still crunchy.
