- 4 snacking cucumbers (sliced thin into chips using a mandolin)
- 1 tbsp chili garlic sauce
- 1 tsp olive oil (a splash)
- 2 tbsp white vinegar (a couple drinks)
- 1 tbsp Cajun seasoning (heavy-handed; adjust to taste)

Prepare the snacking cucumbers by running them over a mandolin to create nice and thin pickle chips.

Place the cucumber slices into a container or bowl and add one tablespoon of chili garlic sauce.

Add a splash of olive oil and a couple of splashes (about 2 tablespoons) of white vinegar to the cucumbers.

Sprinkle Cajun seasoning heavily over the top of the mixture.

Close the container or cover the bowl and shake vigorously until all cucumber slices are fully incorporated and coated in the sauce and seasoning.
Notes
For the best results, use a mandolin for uniform, paper-thin slices. This snack is best served immediately while the cucumbers are still crunchy.
