Ingredients
- 1.5 lb chicken breast (cut into bite-sized pieces)
- 8 oz mushrooms (sliced (cremini or white button))
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic (cloves, minced)
- 1 cup heavy cream
- 0.5 cup chicken broth
- 0.5 cup parmesan cheese (grated)
- salt (to taste)
- black pepper (to taste)
- 1 tbsp fresh parsley (chopped for garnish)

Season the chicken breast pieces with salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer.

Cook the chicken until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil and the butter.

Add the sliced mushrooms to the skillet. Sauté until the mushrooms are browned and their moisture has evaporated, about 5 minutes.

Pour in the chicken broth, scraping the bottom of the pan to release any browned bits.

Notes
Serve this dish over fettuccine, mashed potatoes, or steamed rice to soak up the creamy sauce. If the sauce becomes too thick, add a splash more chicken broth to reach your desired consistency.
