Weights are estimates. Together, the ingredients weigh about 1.02 kg before cooking, which is about 255 g per serving.

Steps

  1. Prepare the pumpkin by cutting it into small cubes. Sauté it in a pan with a drizzle of olive oil, a clove of garlic, and fresh sage leaves until tender.

  2. Once the pumpkin is soft, remove the garlic and sage. Transfer the pumpkin to a blender or use an immersion blender to purée it until smooth. If needed, add a splash of pasta water to reach the desired consistency.

  3. In the same pan, brown the crumbled sausage until fully cooked and slightly crispy.

  4. Boil the pasta in salted water according to the package directions until al dente.

  5. Drain the pasta and add it to the pan with the sausage. Pour in the pumpkin cream and toss everything together over low heat until well combined and creamy. Serve immediately.

Notes

The recipe calls for a very creamy consistency. If the pumpkin cream is too thick, always use starchy pasta water to thin it rather than plain water.
