Ingredients

  • 2 paquetes Maria cookies (7 oz per pack)
  • 800 ml Condensed milk
  • 700 ml Evaporated milk
  • 300 ml Lemon juice (fresh)
  • Lemon zest (for garnish)
  • Blackberries (fresh, for garnish)
  • Mint (fresh leaves for garnish)

Steps

    Place the condensed milk, evaporated milk, and lemon juice in a blender.

    Blend the mixture for 90 seconds until well combined and slightly thickened.

    Prepare a 9x3 inch round springform pan by lining it with parchment paper for easy removal.

    Place a first layer of Maria cookies at the bottom of the pan.

  5. 5

    Pour a portion of the lemon mixture over the cookies.

  6. 6

    Place Maria cookies vertically around the walls of the pan.

  7. 7

    Repeat the process by alternating layers of cookies and layers of the mixture until all ingredients are used.

    Place the pan in the refrigerator and let it rest for at least two hours to set.

    Carefully remove the cake from the springform pan.

    Garnish the top of the cake with lemon zest, fresh blackberries, and mint leaves before serving.

Notes

Ensure the evaporated milk is cold for a better consistency. Refrigeration time can be extended up to 4 hours or overnight for a cleaner cut.
