Ingredients

  • 600 g sweet potatoes (large, peeled)
  • 3 tbsp extra-virgin olive oil (2 tbsp for tossing; 1 tbsp for the glaze)
  • 80 g blue cheese (crumbled)
  • 40 g raw walnuts (lightly toasted)
  • 1.5 tbsp raw honey
  • 1 tsp balsamic vinegar
  • fresh thyme (for garnish)
  • 2 tbsp salt (to taste)
  • black pepper (to taste)

Steps

  1. 1

Heat the oven to 200°C. Peel the sweet potatoes and slice them into 8 thick rounds, about 4 cm thick.

  2. 2

Put the sweet potato rounds in a bowl. Add 2 tbsp of the olive oil, salt, and black pepper, then toss to coat.

  3. 3

Arrange the rounds for roasting and roast for 20 minutes at 200°C.

  4. 4

Flip the rounds and roast for another 15 minutes, until caramelized.

  5. 5

Mix the honey, balsamic vinegar, and remaining 1 tbsp olive oil to make the glaze.

  6. 6

During the final 5 minutes of roasting, brush the rounds with the glaze.

  7. 7

Top the warm rounds with crumbled blue cheese and lightly toasted walnuts.

  8. 8

Garnish with fresh thyme and drizzle over any remaining glaze.

Notes

The listed olive oil totals 3 tbsp: use 2 tbsp to toss the sweet potatoes and 1 tbsp in the glaze. The source does not specify the amount of thyme, salt, or black pepper.
