Masala Penne
A creamy, mildly spicy Indian-style pasta made with tomato, ginger, garlic, green chili, garam masala, and fresh cream. This quick fusion dish is finished with fresh coriander and is served hot.

Ingredients
- 2 cup Penne pasta, boiled (Cook until al dente and drain before adding to the sauce.)
- 1 tbsp Oil
- 0.25 cup Onion (Finely chopped.)
- 1 tsp Garlic (Minced.)
- 1 tsp Ginger (Grated.)
- 1 Green chili (Chopped.)
- 0.5 cup Tomato puree
- 0.5 tsp Garam masala
- 0.25 tsp Red chili powder
- 0.25 cup Fresh cream
- Salt (To taste.)
- Fresh coriander leaves (Chopped, for garnish; use as desired.)
Steps

Bring a pot of salted water to a boil. Add the penne and cook until al dente according to the package directions. Drain well and set aside.

Heat the oil in a pan over medium heat.

Add the finely chopped onion and sauté until softened, about 2–3 minutes.

Add the minced garlic, grated ginger, and chopped green chili. Cook for 1 minute, stirring, until fragrant.

Add the tomato puree and cook for 5–6 minutes, stirring occasionally, until the sauce thickens slightly and loses its raw tomato aroma.

Stir in the garam masala, red chili powder, and salt to taste.

Add the fresh cream and stir to combine. Simmer gently for 2 minutes; do not let the sauce boil vigorously.

Add the cooked penne and toss until every piece is evenly coated with the sauce. Heat briefly if needed.

Garnish with chopped fresh coriander and serve hot.
