Ingredients
- Fresh coriander leaves (Amount not specified)
- 1 tbsp Ghee
- 3 Garlic cloves
- 1 tsp Nigella seeds (Optional)
- 240 g Full-fat milk
- 1.5 tsp Yeast
- 2 tbsp Olive oil or cooking oil (The source gives olive oil or cooking oil as alternatives)
- 1 tsp Sugar
- 1 tsp Salt (The source specifies 1–2 tsp; use to taste within that range)
- 480 g Wheat flour (Plain flour)
- 1 tsp Garlic paste (Listed but marked as not added)
- 120 g Plain yogurt
- Mozzarella or cheddar cheese (Optional; amount not specified)
- Oil for greasing the bowl (A little; amount not specified)
Steps
- 1
In a Thermomix, add the coriander leaves and chop for 3 seconds at speed 5. Transfer to a bowl and set aside.
- 2
Add the ghee to the Thermomix and melt for 1 minute at 120°C, speed 1.
- 3
Add the garlic cloves and chop for 3 seconds at speed 6. For a finer texture, the author used 5 seconds at speed 6 instead.
- 4
Add the optional nigella seeds and sauté for 1 minute at 120°C, speed 1. Transfer the mixture to a bowl and set aside.
- 5
Add the milk and yeast to the Thermomix. Activate the yeast for 2 minutes at 37°C, speed 1.
- 6
Add the olive oil or cooking oil, sugar, salt, wheat flour, garlic paste if using, and plain yogurt. Mix for 20 seconds at speed 3.
- 7
Knead using the dough mode for 3 minutes.
- 8
Lightly oil a bowl. Put the dough in the bowl and shape it into a ball. Cover or leave it to rest for 30 minutes to 1 hour, until risen.
- 9
Divide the dough into several portions and flatten each portion. Add optional mozzarella or cheddar cheese if desired.
- 10
Heat a flat pan. Cook the naan until browned, turning as needed to cook it through.
- 11
Brush or spread the reserved garlic-and-coriander topping over the cooked naan, then serve.
Notes
Skip the topping section if you do not want a topping. Alternatively, chop the garlic first, then add the ghee and sauté it. The amount of coriander and optional cheese is not specified; neither are the number of naan portions. The source does not specify a pan temperature or exact cooking time.
