Pressure Cooker Steamed Chicken
An incredibly simple and healthy method for cooking chicken, which highlights its natural flavor through pressure cooker steaming. The result is tender, juicy, and flavorful meat with very few ingredients.

Ingredients
- 1 small chicken (washed and cut into bite-sized pieces)
- 1 trozo ginger (sliced)
- salt (to taste)
- black pepper (to taste)
- 1 tbsp cooking wine (such as Shaoxing wine or similar)
- 1 tbsp peanut oil (or vegetable cooking oil)
- 1 cup water (for the bottom of the pressure cooker; do not add to the chicken)

Thoroughly wash the small chicken and cut it into small, bite-sized pieces. Pre-boiling is not necessary.

Place the chicken pieces in a bowl and season with the sliced ginger, salt, black pepper, a splash of cooking wine, and a drizzle of peanut or cooking oil.

Mix everything well to ensure the chicken is evenly coated and let marinate for about 15 minutes.

Pour some water into the bottom of a pressure cooker and place a steaming rack inside.

Place the marinated chicken on a heat-resistant plate and set the plate on the rack, above the water level. Ensure you do not add water directly to the plate with the chicken.

Close the pressure cooker lid and cook over medium-low heat for approximately 20 minutes once it reaches pressure.

Safely release the pressure, open the pot, and serve the chicken hot, making use of the natural juices that have accumulated on the plate.
Notes
If you do not have a pressure cooker, you can use a conventional steamer, although the cooking time will increase to about 40-50 minutes until the chicken is tender. The secret to this recipe is that the chicken cooks in its own juices without being diluted in water.
