Ingredients
- 500 g Sabanera Potato (peeled and cut for cooking; approximately 3-4 medium potatoes)
- Paprika (to taste)
- Garlic powder (to taste)
- Salt (to taste)
- 2 tbsp Fresh cilantro (finely chopped)
- 100 g Mozzarella cheese (shredded)
- 1 tbsp Cornstarch (maizena)
- Vegetable oil (enough for frying)

Peel the Sabanera potatoes and boil them in salted water until they are very soft.

Drain the water from the potatoes and mash them with a potato masher or a fork until a smooth puree is obtained.

Season the mashed potatoes with paprika, garlic powder, salt, and the chopped cilantro.

Add the shredded mozzarella cheese and the tablespoon of cornstarch to the mashed potatoes.

Mix and knead all the ingredients well until a homogeneous dough is formed.

Form small balls with the dough and then flatten them slightly with a fork to create textured disks.

Heat enough oil in a frying pan and fry the potatoes until they are golden brown and crispy on both sides.
