High-Protein Japanese Cheesecake Tiramisu

Ingredients
- 1 cup Low-fat cottage cheese (Blended until completely smooth)
- 1 cup Plain Greek yogurt (Preferably thick, nonfat or low-fat yogurt)
- 2 Large eggs (Separated if a lighter, more soufflé-like texture is desired)
- 3 tbsp Granulated sweetener (Use sugar or a granulated zero-calorie sweetener, to taste)
- 1 tbsp Cornstarch
- 1 tsp Vanilla extract
- 0.5 tsp Baking powder
- 12 Ladyfingers (Approximately 100 g total; use gluten-free ladyfingers if needed)
- 1 cup Strong brewed coffee (Cooled completely before dipping the ladyfingers)
- 1 tbsp Unsweetened cocoa powder (For dusting)

Brew the coffee and set it aside to cool completely. Preheat the oven to 350°F (175°C), and line or lightly grease a small baking dish or 8-inch cake pan.

Blend the cottage cheese until smooth and free of curds. Add the Greek yogurt, eggs, sweetener, cornstarch, vanilla, and baking powder, then blend again until the mixture is creamy and uniform.

Pour the cheesecake mixture into the prepared pan. Bake for about 30–35 minutes, until the center is set but still has a slight wobble and the top is lightly golden. Do not overbake, or the cheesecake layer may become dry.

Cool the cheesecake completely. For the lightest texture, chill it before assembling and whisk or blend it briefly until spreadable.

Dip each ladyfinger briefly into the cooled coffee. Soak them just long enough to flavor them without making them collapse.

Arrange half of the coffee-soaked ladyfingers in the bottom of a serving dish or individual glasses.

Spread half of the cooled cheesecake mixture over the ladyfingers, making an even layer.

Repeat with the remaining coffee-soaked ladyfingers and cheesecake mixture.

Cover and refrigerate for at least 2 hours, or until thoroughly chilled and set. Dust the surface with cocoa powder immediately before serving.
