  • 8 oz mushrooms (Thinly sliced)
  • 2 cup baby spinach (Roughly chopped)

  • 0.5 cup shredded mozzarella cheese (Divided; another mild shredded cheese may be used)

Steps

    Preheat the oven to 375°F (190°C). Lightly grease a 9-inch (23-cm) pie dish or quiche pan.

    Heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until their moisture has evaporated and they are lightly browned.

    Add the chopped spinach and cook for 1–2 minutes, just until wilted. Remove the skillet from the heat and allow the vegetables to cool slightly.
