Buffalo Chicken Tortilla Kabobs

Ingredients
- 1.5 lb chicken breast (cut into 1-inch cubes)
- 2 tbsp Bailee's Kitchen Seasoning (or a smoky, garlicky dry rub of choice)
- 0.5 cup buffalo sauce (divided for marinating and basting)
- 4 flour tortillas (large, cut into strips roughly the width of the chicken cubes)
- 1 tbsp olive oil (for coating the chicken)

- fresh chives (finely chopped for garnish)

Cut the chicken breasts into uniform 1-inch cubes and place them in a large mixing bowl.

Drizzle the chicken with olive oil, then add the Bailee's Kitchen seasoning and half of the buffalo sauce. Toss thoroughly until every piece of chicken is well-coated.

Cut the flour tortillas into long strips that are approximately the same width as your chicken cubes.

To assemble the kabobs, take a strip of tortilla and a cube of chicken. Wrap the tortilla strip around the chicken cube and thread the skewer through both the tortilla and the chicken to secure it. Repeat until the skewer is full, leaving space at the ends.

Preheat your grill or grill pan to medium-high heat.

Place the kabobs on the grill. Cook for 3-4 minutes per side, turning occasionally, until the chicken is cooked through (internal temperature of 165°F) and the tortilla edges are crispy and slightly charred.

During the last few minutes of cooking, brush the remaining buffalo sauce over the kabobs for an extra flavor boost.

Notes
If using wooden skewers, be sure to soak them in water for at least 30 minutes before grilling to prevent them from burning. You can adjust the heat level by choosing a mild or extra-hot buffalo sauce.
