Udon Noodle Stir Fry Beef

Ingredients
- 1 lb beef (thinly sliced)
- 2 carrots (julienned)
- 8 oz mushrooms (sliced)
- 1 bell pepper (any color, sliced)
- 1 onion (sliced)
- 4 bricks frozen udon noodles
- sesame oil (for drizzling on noodles and in sauce)
- olive oil (for cooking)
- garlic (minced)
- salt (to taste)
- black pepper (to taste)
- 2 tsp soy sauce (for beef seasoning)
- 2 tsp dark soy sauce (for beef color)
- 1 TBSP brown sugar (for sauce)
- 3 tsp dark soy sauce (for sauce)
- 3 tsp low sodium soy sauce (for sauce)
- 4 tsp rice vinegar (for sauce)
- 2 TBSP oyster sauce (for sauce)
- 1 TBSP sesame oil (for sauce)
- scallions (chopped, for garnish)

Prep all vegetables by slicing the onions, mushrooms, and bell peppers, and julienning the carrots. Thinly slice the beef if not already done.

Cook the frozen udon noodles in boiling water for a couple of minutes until tender. Drain well, rinse under cold water, and toss with a drizzle of sesame oil to prevent sticking.

Heat olive oil in a pan over medium-high heat. Sauté minced garlic until fragrant. Add the beef in an even layer and cook undisturbed for a couple of minutes until browned. Season with salt, pepper, 2 tsp soy sauce, and 2 tsp dark soy sauce. Stir and cook for another 1-2 minutes, then remove from the pan.

In the same pan, add a little more oil if needed and sauté more garlic until fragrant. Add mushrooms and cook for about 1 minute.

Add onions, carrots, and bell peppers to the pan. Sauté for 3-5 minutes until tender-crisp.

Add the cooked udon noodles and the cooked beef back into the pan and toss to combine.

Whisk together the sauce ingredients (brown sugar, dark soy sauce, low sodium soy sauce, rice vinegar, oyster sauce, sesame oil, salt, and pepper) in a small bowl, then pour over the noodle mixture.

Toss everything until well combined and coated in sauce. Turn off the heat and garnish with chopped scallions before serving.
Notes
You can easily substitute the vegetables with whatever you have on hand. Preparing the sauce in a separate bowl before cooking helps ensure even distribution and prevents overcooking the noodles while measuring ingredients.
