Ingredients

  • 2 Rice paper sheets (Round sheets, approximately 22 cm each)
  • 1 Egg for egg wash (Beaten)
  • 1 tsp Dijon mustard (Spread over the rice paper)
  • 2 slices Sliced cheese (Use a good melting cheese such as Swiss, Gruyère, or cheddar)
  • 2 slices Sliced ham (Deli ham or thinly sliced cooked ham)
  • 1 tsp Everything bagel seasoning (Sprinkled over the filling)
  • 1 Egg for topping (Added whole on top; bake until the white sets and the yolk remains jammy)

Steps

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Prepare the beaten egg in a shallow dish for dipping the rice paper.

    Dip one rice paper sheet briefly into the beaten egg, coating both sides without soaking it until floppy. Place it on the prepared baking sheet.

    Dip the second rice paper sheet in the egg wash and place it directly on top of the first sheet, aligning the edges. The two layers will form a sturdier, crispier base.

    Spread the Dijon mustard over the center of the rice paper, leaving a border around the edge so the filling does not spill out.

    Add the sliced cheese over the mustard. Arrange the ham on top of the cheese, keeping the center slightly open for the egg.

    Carefully crack the remaining egg into the center of the layered rice paper and filling. Keep the yolk intact if possible.
