Ingredients

  • 2 rice paper (circular sheets)
  • 3 eggs (2 for the filling, 1 for the egg wash; beaten)
  • 3 rebanada bacon (cooked and chopped)
  • 0.25 cup mozzarella cheese (shredded)
  • everything bagel seasoning (for sprinkling on top)
  • 1 tbsp vegetable oil (for frying)

Steps

    Prepare the scrambled eggs in a skillet over medium heat until they are just cooked. Remove from heat and set aside.

    Cook the bacon until crispy, drain it, and chop it into small pieces.

    Beat one egg in a shallow dish to create an egg wash.

    Dip a sheet of rice paper into the egg wash until it is completely coated and begins to soften.

    Place the rice paper sheet on a clean surface. Add a portion of the scrambled eggs, chopped bacon, and mozzarella cheese in the center.

    Roll the rice paper tightly over the filling and then twist it onto itself to form a tight spiral.

    Heat a little oil in a skillet over medium-high heat.

Notes

This technique of hydrating the rice paper in egg instead of water creates a much richer and crispier texture when fried. Make sure not to overfill the spiral so it does not break while rolling.
