High Protein Chocolate Fudge Squares

Ingredients
- 300 g cottage cheese
- 60 g chocolate protein powder
- 40 g almond flour
- 100 g chocolate (melted)
- 15 g cocoa powder
- 15 g maple syrup (optional; range 10-20g)
- salt (pinch)
- 1.5 tbsp milk (if needed; range 1-2 tbsp)
- 1 tbsp protein powder (for glaze)
- 1 tbsp cocoa powder (for glaze)
- 1 tbsp chocolate spread (for glaze)
- milk (to thin glaze)
- flaky sea salt (for sprinkling)

Place the cottage cheese, chocolate protein powder, almond flour, 15g cocoa powder, maple syrup (if using), and a pinch of salt into a blender.

Blend all ingredients until smooth, excluding the melted chocolate.

Pour in the melted chocolate and blend briefly or fold through until the mixture is completely smooth.

Add a splash of milk (1-2 tbsp) if needed to loosen the mixture slightly; it should remain thick but be spreadable.

Spread the mixture into a lined container and smooth the top with a spatula.

In a small bowl, mix the glaze ingredients: 1 tbsp protein powder, 1 tbsp cocoa powder, 1 tbsp chocolate spread, and enough milk to reach a pourable consistency.

Pour the glaze over the top of the fudge and sprinkle with flaky sea salt.

Place the container in the fridge and chill for 1–2 hours until the fudge is firm.

Notes
If the mixture is too thick to blend, add milk sparingly. For a firmer texture, some users suggest chilling in the freezer.
