Ingredients

  • 1 tsp ghee
  • 1 cup sweet corn (kernels)
  • 1 cup shredded chicken breast (cooked and shredded)
  • 0.25 cup red onion (finely chopped)
  • 0.5 cup tomato (diced)
  • 2 tbsp scallions (chopped)
  • fresh cilantro (chopped, to taste and extra for garnish)
  • 0.5 cup plain Greek yogurt (unsweetened)
  • salt (to taste)
  • black pepper (to taste)
  • 1 lime (juice)
  • 0.5 cup cheese (divided (part for the mixture and part for garnish))

Steps

    Heat a skillet over medium heat and add one teaspoon of ghee.

    Add the corn kernels and shredded chicken to the skillet.

    Sauté the ingredients until the corn and chicken are well-browned, then remove from heat.

    Transfer the golden mixture to a large bowl.

    Add the chopped red onion, tomato, scallions, and cilantro to the bowl.

    Stir in the plain Greek yogurt to provide creaminess.

    Season with salt, pepper, and the juice of one lime.

    Add part of the cheese to the mixture and stir well to integrate all the flavors.

    Finish the dish by sprinkling more cheese and fresh cilantro on top before serving.

Notes

You can use any cheese you like, preferably one that adds good flavor like queso campesino or mozzarella. Greek yogurt replaces mayonnaise for a lighter version.
